Haha, this is great! I did something similar when I redid my kitchen. The microwave was 100% the worst part!

Just use a floor jack on your stove top

Over-the-range microwaves are the devil.  Mrs. BaconSandwich and I had to replace ours about a year ago.  It was a nightmare.

May I ask why?  I’ve replaced several and it always seems straightforward, especially if they hook into a bracket.

Agree.  If they have a bracket then the job isn’t so bad.  Saying that, since the microwave drops down on the bracket, there’s not a lot of room to lift the darned thing up so it will drop down and not have a gap.  I was just replacing a broken oven, but I was so disappointed with the job that the builder did on that one, I redid much of the job so it would be correct.  My biggest issue was that I had moulding on the lower part of my cabinets on either side, so I couldn’t lift the darned thing into place, but had to slot it in, holding it at the mounted height until I could engage the bracket...and I’m not as strong as I used to be.

In our case:
- New microwave had a different bracket. Had to replace the bracket, and had trouble finding the studs to anchor the new bracket into.
- Cord hole was in a different spot. This meant drilling a hole through the cupboard above. Biggest drill bits I had were forstner bits, and took a bit of pressure to get them to dig in. Also had to do this as quietly as possible (see next point).
- They were both quite heavy - impossible to do it all myself, so my wife and I did it together, which meant waiting until after bedtime . Had to do everything as quietly as possible as kids were asleep.
- After we removed the old microwave, we set it down on our dining room table, which it ended up scratching quite badly. I wasn’t too worried about this (it’s a homemade table), but it still wasn’t ideal.

Theyre loud, inefficient and in the way. On high it would be stupid loud and my smoke detector would still go off when cooking (worse yet is it's a true ducted so it definitely shouldn't be having that problem).

You might find that’s a little high to be properly effective. Source: my sisters is a bit high and when they spilled something in the oven at thanksgiving it filled the whole house with smoke. Mine is about 24” above the stove (whatever the minimum in the directions)  and it really sucks up the smoke any time that happens.

I may go make some smoke in the oven later and see how it does. Anything would be more efficient than the fan the microwave had.

Sure. And of course any fan that vents outside is heaps better than that pretend filter and dump it back out the front.
